In the small town of Hartford, Alabama a small first-generation farm by the name of Carroll Farms is owned and operated by 23-year-old David Carroll. The farm consists of small-scale vegetable production, a few acres of row crop and home to a very unique herd of pigs. The farm started raising pigs with the goal of producing the highest quality pork available to the market while maintaining competitive pricing and natural practices. Berkshires was the breed chosen to meet these goals. Renowned around the world for their genetic tendencies to produce short muscle fibres and a firm white intramuscular marbling making it a very distinct step above commercial pork. Being the oldest pork registry in the United States, Berkshire genetics still carry those meat characteristics natural pork originally carried; deep red color, tender texture with a low drip loss and a very deep flavor profile. But the genetics can not produce quality alone. Carroll Farms makes great strides to raise their pigs as humane and natural as possible. All of their pigs are raised and kept on rotational pasture that is planted in warm and cool season grazings and supplemented with high-quality local grains either raised on the farm or purchased from local farms.
